Longaniza Tacos

PREPARATION

  1. In a skillet over medium heat, add the longaniza and oil, and cook until fried and crispy.
  2. Add the tomato and continue cooking for 1 more minute, then remove from the heat and place in a bowl.
  3. Add the raw onion and chopped cilantro, then season with salt, lime juice, and Picamás sauce to taste.
  4. In a skillet, add 2 tablespoons of oil, and heat the corn tortillas, two at a time, until they are soft and flexible.

To assemble the Tacos:
On 4 plates, place 2 overlapping tortillas on each one and distribute the filling over the tortillas. Fold them and serve with more salsa.
