Delicious Corn Cake with Sibarita Amarillin

 

Corn Cake is a highly popular dish in South America. Each country has its own version, and here we enjoy it with that special touch that only Amarillin Sibarita can provide. Available at Rapidito Latin Market.

 

Ingredients:

  • 5 ears of corn, kernels removed
  • 4 tbsp vegetable oil
  • 1 tbsp butter
  • ½ cup evaporated milk
  • 6 ½ tbsp sugar
  • 6 tbsp tomato puree
  • 500g ground beef
  • ½ red onion, finely chopped
  • 4 tbsp Sibarita Amarillin
  • 1 tsp Sibarita Ajo
  •  2 tbsp Sibarita Panquita
  •  Sibarita Comino con Pimienta, to taste
  •  Sibarita Ground Oregano, to taste
  • 4 eggs
  • ½ cup black raisins
  • 6 chopped olives
  •  Salt, to taste
  • 1 tbsp chopped parsley
  •  ¼ cup grated Parmesan cheese

Preparation:

Corn Cake is a very popular dish in South America. Each country has its own version, and here we enjoy it with that special touch that only Amarillin Sibarita can provide.

  1. Blend the corn kernels with 6 tbsp of sugar, milk, and Amarillin Sibarita until you get a semi-thick paste.
  2. In a skillet, melt the butter with 2 tbsp of vegetable oil, add the corn paste, and cook for 7 minutes over medium heat. Stir until a mass forms that detaches from the skillet. Set aside.
  3. In another skillet, prepare the dressing: pour 2 tbsp of vegetable oil, the chopped onion, a pinch of salt, and Sibarita Ajo. Cook for 3 minutes over medium heat, add Sibarita Panquita, and mix well.
  4. When the dressing is ready, add the ground beef, Sibarita Ground Oregano, Sibarita Comino con Pimienta, and salt to taste. Stir until combined, cook for 7 minutes, add the tomato puree and ½ tbsp of sugar, and mix again.
  5. Turn off the heat and add the raisins, chopped olives, and the 3 chopped hard-boiled eggs. Mix well and, finally, add the chopped parsley.
  6. To assemble the Corn Cake: add 2 beaten eggs to the corn paste to unify it and then divide it into 2 parts.
  7. Place half of the corn paste in the base of a buttered mold of approximately 17 x 25 cm. On top of it, distribute the ground beef filling and cover with the other half of the paste. Sprinkle with Parmesan cheese.
  8. Place the mold in the preheated oven at 180˚C and bake the Corn Cake for 50 minutes.
  9. When ready, remove and serve a portion of the delicious Corn Cake warm accompanied by a salad of fresh lettuce.
As an appetizer or as a main course, Corn Cake always hits the spot. It is best enjoyed when prepared with Sibarita and shared with your loved ones.
