Queso Fundido with Chorizo

Queso fundido is a Mexican-style melted cheese dish that typically includes chorizo, mushrooms, or poblano peppers. You can find queso fundido in almost every Mexican taquería. It’s served with corn or flour tortillas, so everyone can make their own tacos or quesadillas at the table. It's a very easy appetizer to make and share, and it can also be served as a main dish.
The traditional cheese used to make this dish is Queso Oaxaca because it has the perfect texture and its flavor pairs well with the ingredients. This dish is so common in Mexico that many people know it as choriqueso (when made with chorizo) or champiqueso (when made with mushrooms).
This recipe uses chorizo, but you can substitute it with sautéed sliced mushrooms for a delicious vegetarian option. You can use traditional Mexican Chorizo or Spicy Chorizo.
Ingredients:
- 2 La Bodeguita Mexican Chorizos (available at our store)
- 12 oz. La Vaquita Queso Oaxaca, crumbled or shredded (available at our store)
- 6 Sonora Flour Tortillas or La Hacienda Corn Tortillas Chips
- 1 tbsp. chopped cilantro for garnish (optional)
- Lime slices for garnish (optional)
- Your choice of salsa. (We have a wide variety of delicious sauces available in our store)
Instructions:
- Preheat the oven to 350°F.
- Remove the casing from the chorizos and crumble them. In a 10-inch skillet over medium heat, cook the crumbled chorizo until well browned, stirring frequently. Drain the excess fat or place the cooked chorizo on a paper towel.
- Place the chorizo in a small clay pot or cast iron skillet (or any small oven-safe dish), reserving a couple of tablespoons to garnish before serving. Cover the chorizo with the cheese and bake for 10-12 minutes, until the cheese is bubbly and starts to brown.
- Remove from the oven and garnish with the reserved chorizo and cilantro, if desired.
- Serve hot with tortillas or chips, lime slices, and your favorite salsa.
